We don't roast in bulk and hope for the best. Every Nu Coffee bag is triggered by your order — small batch, to profile, and shipped within 24–48 hours of roasting. This is what fresh actually means.
Small Batch Roasting
Industrial roasters operate at 500+ lbs per batch. We max out at 25 lbs. That's not a limitation — it's a choice. At small batch scale, every variable is controllable: temperature curves, development time, the exact moment of first crack.
Large batches average out defects and mask character. Small batches preserve it. When your coffee has complex floral and fruit notes, we can't afford to blend them away. Every origin gets its own roast profile — developed, tested, and locked in before a single bag ships.
The Roast-to-Order Difference
The traditional coffee supply chain is broken by design. Coffee is roasted weeks or months before it reaches you — sitting in warehouses, distribution centers, store shelves. By the time you open the bag, the coffee is a ghost of itself.

The CO2 Window: Coffee releases CO2 for 2–7 days after roasting (degassing). The peak flavor window — when aromatics are fully developed and acidity is balanced — is days 5 to 30 post-roast. We ship so you receive your coffee right as it enters that window. That's not coincidence. It's design.
Our Roast Profiles
Ethiopian coffee isn't one-size-fits-all. Different origins have different densities, moisture levels, and flavor compounds — each responding differently to heat. We've developed dedicated profiles for every origin we carry.
Yirgacheffe & Sidamo
Preserves delicate floral and citrus notes. Light roasts require precise temperature control to fully develop sweetness without bitterness — the most technically demanding profile we run.
Kaffa & Limu
The sweet spot. Full development of origin characteristics with balanced acidity and sweetness. Kaffa's ancient forest complexity shines at medium with zero harshness.
Harrar
Extended development brings out stone fruit, dark cherry, and wine-like complexity in our natural-process Harrar beans. The roast amplifies what nature started.
Djimmah
Full city+ roast. Rich chocolate and caramel notes dominate. Dense, syrupy body perfect for espresso. We push just far enough to develop without scorching origin character.
Quality Control
Every batch goes through four QC checkpoints before your order is fulfilled. We don't ship coffee we wouldn't drink ourselves.
Green Inspection — Defect-free beans only. Every lot visually sorted before roasting.
Roast Profile Adherence — Temperature logged throughout. No deviation from approved curve.
Cupping Score — Every batch is cup-tested by our roaster before release. Scored against baseline.
Packaging Seal — CO2 valve integrity, bag seal, roast date stamp. No exceptions.

The Stronghold S9X: Precision Roasting Technology
Nu Coffee roasts exclusively on the Stronghold S9X — one of the most advanced commercial drum roasters in the world. Electrically heated and fully ventless, it eliminates the combustion gases and inconsistencies of traditional gas roasters.
The S9X uses a combination of convection, conduction, and radiant heat — giving our roasters precise control over every phase of the roast curve, from drying to Maillard development to first crack.

Three Heat Sources. One Perfect Roast.
Most drum roasters rely on a single heat source — typically a gas flame. The S9X uses three simultaneous, independently controlled heat delivery systems to develop every layer of the coffee's flavor.
Hot air circulates through the drum, penetrating the bean mass evenly. Convection is responsible for consistent interior development and prevents the scorching that single-source roasters often cause.
Direct contact between the bean and the drum surface transfers heat efficiently to the bean's outer layers, building structure and body. The rotating drum ensures every bean is evenly exposed.
Far-infrared energy penetrates directly into the bean's cellular structure, driving Maillard reactions and caramelization with unmatched evenness — unlocking sweetness and complexity that single-source roasters cannot achieve.
No Gas. No Smoke. No Compromise.
Traditional gas roasters burn fuel to generate heat — a process that introduces combustion byproducts into the roasting environment and requires industrial ventilation systems. The S9X is 100% electric, eliminating combustion entirely.
Its built-in catalytic afterburner captures and neutralizes chaff and smoke particles, producing a clean roasting environment with dramatically lower emissions. This isn't just better for the planet — it's better for the coffee. Without combustion gases in the drum, nothing interferes with the pure expression of the bean's origin character.
The result: a cleaner, brighter, more transparent cup — where the terroir of Sidama, Ethiopia comes through unobstructed.
Digital Profile Roasting
Every roast profile at Nu Coffee is designed, tested, and locked in — then executed identically every single time. The S9X's integrated software logs bean temperature, exhaust temperature, ROR (Rate of Rise), time-to-first-crack, and development time ratio for every batch.
This means the Yirgacheffe you ordered six months ago tastes exactly like the bag you receive today. Repeatability at this level is what separates craft specialty roasting from commodity production.
