The Full Journey
Six carefully controlled steps — from ancient Ethiopian soil to your front door.
Step 1 — Grown in Sidama
Cultivated at 1,500–2,200m elevation in Sidama's mineral-rich volcanic soil, our coffee grows shade-covered under native trees with two harvests per year. Ethiopia harbors over 1,000 indigenous coffee varieties — more genetic diversity than anywhere else on earth.
Step 2 — Hand Harvested
Only ripe red cherries are hand-selected — no mechanical stripping. Farmers return to the same trees 3–4 times per season to collect only peak-ripeness fruit. This labor-intensive practice is what separates specialty coffee from commodity coffee.
Step 3 — Processed & Sorted
Depending on origin, cherries are either washed (wet) or naturally dried. Washed lots go through pulping, fermentation, washing, and sun-drying on raised African beds. Every lot is cupped and quality-scored before it moves forward.
Step 4 — Imported with Integrity
We maintain direct trade relationships — no commodity brokers, no anonymous lots. Full traceability to specific farms and washing stations. USDA Organic and Fair Trade certified at origin, ensuring the people who grow your coffee are paid fairly.
Step 5 — Roasted to Order
Your order triggers a fresh roast. We roast in small batches using ventless drum technology, with roast profiles precisely tailored to each origin's characteristics. Maximum batch size: 25 lbs. Minimum rest time: 12 hours after roasting.
Step 6 — Shipped Fresh
Packaged immediately after roasting in bags with one-way CO2 valves. Ships within 24–48 hours. Arrives at peak flavor — not 3–12 months after roasting like grocery store coffee. You're getting coffee at exactly the right moment.
